Blueberry Brie Scones: This years summer is probably one of the most horrible summers ever. On my front yard we have a swimming pool but because of the bad weather I was able to get my booty in to it only 5 times this summer. I am still desperately waiting for those days when I’ll be able to put on my pastel summer dresses, which are right now hiding on the back of my closet, still waiting for their big day to come out. But on the bright side scones and biscuits are the best in these kind of days, that’s why I challenged my cooking skills all over again.
Letošnje poletje je verjetno eno izmed najbolj mrzlih in tečnih poletij do sedaj. Pred hišo stoji bazen, a zaradi premrzlega vremena sem svojo ritko namočila notri samo 5x. Še vedno čakam na tiste dneve, ko bom lahko oblekla poletne oblekice pastelnih barv, ki so skrbno skrite v ozadju omare in čakajo na svoj dan pod žgočim soncem. A topli kolački so vedno najboljši ravno ob takšnih deževnih dneh, zato sem se odločila, da zopet postavim svoje “kuharske sposobnosti” na preizkušnjo.

This was the first time that I was actually kneading the dough and I have to admit I still hate doing it. Recipes where you all just throw in the mixer and it does everything by itself while you are texting your friends is the right thing for me. When my mom saw the final product, her first question was: “ who kneaded a dough instead of you?”. The feeling of having sticky dough between your fingers is awful but I fixed that quickly after I had been adding more flour to it until dough became more firm.
Prvič sem dejansko gnetla testo in priznam, da še vedno mrzim to početje. Recepti kjer vse sestavine zmečeš v mešalnik med tem, ko ti odpisuješ na sms-e so definitivno stvar zame. Ko je mami videla končni izdelek je njen prvi odziv bil: “kdo ti je pa gnetel testo?”. Bil je grozen občutek, ko se ti vsa lepljiva masa prijema med prste, a sem to hitro poravila, saj sem dodajala moko dokler sama masa ni postala bolj čvrsta.

Because of the brie cheese and not that much sugar in scones I believe this recipe is not for a dessert but more as a breakfast. After eating just one scone you won’t feel any hungry anymore but you might feel thirsty, that’s why I served it with a hot tea. Combination of scones and tea will absolutely make you feel like you are sitting on balcony in London. I used Blueberry Muffin tea by Lipton. Could I make it more obvious ?
Zaradi brie sira in ne veliko sladkorja v kolačkih sem mnenja, da tukaj ne govorimo o sladici ampak bolj o zajtrku. Po samo enem kosu kolačka, več ne boš čutil/a lakoto, a kljub temu veliko žejo, zato priporočam, da jih postrežeš ob skodelici vročega čaja. Kombinacija kolačkov in čaja ti bo prinesla občutek, da ravno sediš na balkonu v Londonu. Sama sem postregla s stilom in zato sem izbrala najbolj primeren čaj-Bluberry Muffin od Lipton-a.  A bi lahko bila bolj očitna?

INGREDIENTS SESTAVINE
2 cups all-purpose flour 250 g moke
2 tablespoons sugar 2 žlice sladkorja
2 teaspoons baking powder 2 čajni žlički pecilnega praška
1/4 teaspoon salt 1/4 čajne žličke soli
5 tablespoons butter 71 g masla
1/2 cup cold milk 120 ml mrzlega mleka
1 large egg, lightly beaten 1 večje jajce, rahlo stepeno
4 ounces brie cheese, broken into pieces 115 g brie sira, narezanega na koščke
4 ounces fresh blueberries 115 g svežih borovnic
milk or lightly beaten egg, for wash mleko ali rahlo stepeno jajce, za premaz
coarse sugar, for sprinkling kristalni sladkor, za posip

  • preheat oven to 425°F and line a sheet pan with parchment paper
  • in a larger bowl combine the flour, baking powder and salt. Add the butter and use a knife to cut the butter into the dry ingredients until butter is roughly the size of small peas
  • combine the milk and beaten egg and add to the bowl. Stir until the mixture comes together into a sticky dough. Add the blueberries and brie pieces and fold in gently until incorporated. Pat out dough on a lightly floured surface to about and inch thick. Cut into triangles
  • place on the prepared sheet pan and brush with a lightly beaten egg and sprinkle with course sugar. Bake until golden, about 15-20 minutes. Let cool for a few minutes and then serve immediately.

  • segrej pečico na 220°C in na pekač položi peki papir
  • v večji posodi skupaj zmešaj moko, pecilni prašek in sol. Temu dodaj maslo, ki ga s pomočjo noža narežeš na čim manjše koščke
  • zmešaj mleko in stepeno jajce ter dodaj zmesi, ki so jo pripravili pred tem. Testo gneti vse dokler ne nastane lepljiva zmes. Zmesi dodaj borovnice in koške brie sira ter jo no rahlo gneti dokler se vse sestavine ne povežejo. Testo položi na rahlo pomokano površino in s pomočjo prstov ustvari krog debeljine 3 cm. Sam krog razreži na trikotnike
  • testo prestavi na pekač in ga premaži z jajcem/mlekom ter posipaj s sladkorjem. Peči v pečici dokler skorja ne postane zlato-rjave barve oz. približno 15-20 minut. Pusti, da se pohladi za par minut in postreži še toplo.
